Yes, we're inspired by authentic Mexican cuisine, but our lust for new tastes and flavours means we've added a few other ideas, courtesy of the largest Mexican communities in the USA. Our culinary quest has taken us from Mexico City, Zihuatenejo, Ixtapa, and the Baja Peninsula on Mexico's Pacific coast to Chicago, New York, Los Angeles, and San Francisco, to name just a handful of places.
